Eat Your Hideout

It's easy to get complacent with your dining standards when you've visited an island a few times. That's understandable – if you don't have the right guidance...
That's why you're grabbing a date and hopping on the ferry to Rainforest Hideaway, a not-so-nascent, but still fine-dining, experience on the island of St. Lucia. Tucked away on the shore of Marigot Bay, RFH is best beheld at night – stars dot the sheath of night sky, providing a splendid atmosphere that will, later in the evening, almost guarantee a... reward. The rest is on you, but we feel compelled to give some pointers.
Settle in at a table with a view of the reef, accentuated by underwater lighting, and start with Chef Jim Verity's Seared Orange Glazed Scallops, served with a cauliflower beignet (curried) and a five roasted pepper coulis. This should be followed by the Mushroom and Goat Cheese Stuffed Lamb Rack with crushed garlic roasted potatoes and a liquorice jus. Finally, sweeten the deal with the Mango Panna cotta, served with a rum and chocolate sauce.
