Chaud You Right

Every once in a while, a really good chef opens a really good restaurant. But we like to hold out for when a great chef opens a great restaurant (you can appreciate that we have standards).
Enter Chaud – a special pull-out slice of culinary heaven, sitting pretty around the Queen’s Park Savannah, Port of Spain. Opened in January 2008 by gastronomy maven, Chef Khalid Mohammed, Chaud is a welcomed reprieve from the typical Port of Spain dining fare. And with its versatile, internationally-tinged, Caribbean cuisine, this is fine dining done right.
Original art on the walls, deluxe fabric on the chairs, and the best service money can buy: Chaud stocks a lot of charm, and, coincidentally, a lot of wine. Can you tell yet why we like it so much? While you make your reservation, we’ll get into details. This will soon be one of your main jaunts while here for Carnival, so you’d want to stake your claim at a nice table. Many other diners rush for the window seats facing the Savannah, but you should set your sights on a less ambitious, but more intimate location. We like the table in the south-east corner of the main room…
For starters at this soigne bistro, you should try the Duo of Foie Gras, with caramelised almonds, coconut butter and brioche toast. Move your taste buds along to the Pistachio crusted Chilean Seabass: an amalgam of spinach fricassee, cipolline onions and pumpkin broth. Dessert, of course, will be either the Chaud sundae or the vanilla bean panna cotta.
Walk with a date for this one, and don’t expect Khalid Mohammed (you just have to say his entire name) to greet you personally. However, we will try to put in a good word…
